ABC+ – Octopus Stew

The octopus is perfectly cooked of course, tender but still structured, its flavour enhanced by the sauce’s depth, the texture makes you appreciate the care that went into cooking it. The stew is rich and aromatic, with tomatoes that have been reduced to a jammy sweetness and garlic and chilli that add layers of depth. The olive oil ties everything together, its fruitiness carries the richness of the octopus and the sauce.

Spoon this over rice for a meal that’s simple but special, or serve it as part of a spread with olives you saved for an occasion, and a crusty loaf. It's undoubtedly a fancy tin, the kind you’ll want to share, but may choose not to. Open a nice bottle. We chose a Rhône.
