Made from onions cooked down until sticky sweet, the relish is the star here. There’s curry in it, but it’s a mild rounded flavour thats benefited from its time in the tin. A little cayenne gives warmth at the edges. The trout is delicate but it stands up to the sauce. It’s mild enough to sit comfortably with the sweetness of the onions.

Try it on a salted biscuit with peppery leaves and a smear of cream cheese. It’s simple, well-balanced, and easy to eat so open a crisp white wine. It doesn’t need any extra dressing up.
