The extra virgin olive oil does what it should: carries the spice, bathes the octopus, adds a little grassiness but doesn't interfere. Portuguese waters produce octopus with genuine character - sweet, faintly mineral, substantial. The pieces have that perfect give when you bite them. The chilli isn’t aggressive.

Try with a dollop of cream cheese on a salty crisp or cracker for ultimate ease, even better with patatas bravas and well worth the time spent making a good brava sauce.
