La Brujula - Bonito Del Norte in Olive Oil

£7.95

Bonito del Norte en Aceite de Oliva Nº54

Thick fillets of MSC certified Albacore Tuna, cut by hand and laid into the tin with a bit of space left for the olive oil.

The fish is from the Cantabrian Sea, caught in season and processed quickly. It’s cooked, trimmed, and packed by experienced hands, without much interference. The colour retains a pinkish hue, and the fillet holds together in a way that suggests they’ve not been wrestled around too much.

There’s a natural sweetness to the fish that comes through first, with the oil following behind - light, faintly fruity, doing its job without getting in the way. The salt sits at just the right level to let the fish shine.

This tin doesn’t need arranging. Set it on the table with some bread and a salad and get on with it.

This tin has been recognised as one of the Worlds Top 100 fish tins.

Ingredients: Albacore Tuna(fish), olive oil, salt.

Net Weight: 115g

About La Brújula

La Brújula was founded in 1999 in Ribadumia, in Galicia’s Rías Baixas, building on a family background in seafood. They work with what’s close: shellfish from the Galician rías and fish from the Cantabrian Sea, packed when it’s in season and at its best.

Everything is done by hand. The Damas del Mar clean, sort, and place each fish into the tin, keeping things consistent. There’s no dressing it up either - just seafood, olive oil or brine, and salt.

The name is The Compass and it points you in the right direction. It’s about knowing where the product comes from and not interfering too much once you have it.

They’ve become one of the reference points for high-end conservas in Spain, winning multiple awards. Not because they push for it, but because the tins speak for themselves.
