The flesh is firm but gives easily, sweet and plump. The salt is held back, just enough to bring out the natural depth of the fish. The oil is clear and light, carrying a faint fruitiness without weighing things down. The tin opens with a freshly cooked seafood aroma.

About La Brújula

La Brújula was founded in 1999 in Ribadumia, in Galicia’s Rías Baixas, building on a family background in seafood. They work with what’s close: shellfish from the Galician rías and fish from the Cantabrian Sea, packed when it’s in season and at its best.

Everything is done by hand. The Damas del Mar clean, sort, and place each fish into the tin, keeping things consistent. There’s no dressing it up either - just seafood, olive oil or brine, and salt.

The name is The Compass and it points you in the right direction. It’s about knowing where the product comes from and not interfering too much once you have it.
