A potential future of sustainable tinned fish exists today in the high Cathar Pyrenees at 1,150 metres altitude. La Truitelle produces the first AB (Agriculture Biologique)-certified organic tinned small mountain trout in oil from François Isambert's La Fajolle freshwater fish farm—certified organic since 2001.
Their Ecological Range offers rainbow trout raised in pristine Pyrenean waters with full FR BIO 01 European Union organic certification. These young fish develop exceptional flavour while requiring minimal resources—consuming half the feed of standard trout. The feed itself is Ecocert AB-certified and utilises sustainable aquaculture by-products in a circular approach to fish farming.
La Truitelle is working toward a "Zero Impact" goal through partnerships with producers of insect meal from recycled green waste. Since launching in spring 2019, these preserves have earned numerous awards for both taste and ecological commitment.
