Anglers jig for them under harbour lights on calm autumn nights when the water's clear, spring tides can bring in dozens. These squid are caught by handline boats, then prepared and braised in their own ink with tomato, white wine and spices.

The ink creates a dark, savoury sauce with umami depth. The squid has firm texture and good bite.

Good spooned over rice where the ink sauce does the work, or tossed through pasta with garlic and parsley.
