The mackerel in this double sized tin comes from the waters around Terceira Island, where the Atlantic is deep, cold, and full of life. The fish are caught with pole-and-line, then cold smoked over Azorean Firetree wood - a local, endemic species sourced from forestry management discard. After smoking, the mackerel is packed in olive oil, which softens the smoke’s edge and keeps the flesh moist and flaky, with a rich, briny sweetness that lingers.

The process is slow and hands-on in a specially built Smokehouse. The smoking is done in small batches, the wood imparts a distinct flavour. The result is a beautiful fish, rich with distinct Azorean character.

Serve with a simple salad and a good loaf, with the ocean stretching out in front of you and the last of the day’s light catching the edges of the tin (or at least imagine that’s where you are).
