Tenorio - Tuna Fillets in Escabeche

£4.95

Wine vinegar and olive oil meet in this tin like old friends who've learned to appreciate their differences. Paprika stains this marinade a gentle rust colour whilst wine vinegar provides the brightness that makes everything sing. Tomato and fried onions add sweetness and depth, creating layers you discover as you go.

The bonito fillets maintain their Atlantic character throughout, firm texture, deep flavour, absorbing the escabeche whilst staying true to themselves. Particularly good served at room temperature over warmed butter beans and rocket.

Pole and line caught in Azorean waters where this style of preservation has been perfected over generations.

Ingredients: Tuna (65%), marinade (35%) (olive oil, white wine vinegar, paprika paste [paprika, salt], tomato, fried onions [onion, corn oil], black pepper, garlic powder, bay leaf powder, oregano, salt, flavouring).

About Tenorio

In the remote Atlantic archipelago of the Azores, Tenorio tuna fillets carry forward a tradition begun by Francisco Rodriguez Tenório in 1880. His original "Tuna in escabeche" established a standard for quality that continues through Cofaco's premium line today.

What distinguishes these tins is the remarkably clean flavour of bonito tuna, hand-prepared by skilled workers who maintain century-old methods. Each fillet is packed with olive oil and a touch of salt, allowing the fish's natural richness to shine through.

These fillets make brilliant quick meals—spread on crusty bread, tossed through pasta with lemon, or simply enjoyed straight from the tin with a glass of crisp white wine.

This is tinned tuna as it should be—simple, pure and treated with respect from ocean to plate.
