





Zallo - Bonito Del Norte - White Tuna in Sauce Catalan

The tuna itself is the same excellent line-caught fish from the Cantabrian Sea, but this sauce changes the tin. Each fork comes out coated in the stuff, which is the point.
We used this to make Bánh Mì where the sauce adds it’s smoky notes and the vinegar helps cut the paté and add an extra lift.
