Most people never get near ventresca because there's not much of it per fish, and what there is usually disappears into the best restaurants. Zallo takes this prized cut from their Cantabrian Sea catch and packs it in olive oil that becomes infused with all that natural tuna fat.

Don't overcomplicate it - this is best eaten simply on good bread with nothing more than a sprinkle of salt and maybe a squeeze of lemon.

About Zallo

From Bermeo's historic fishing port in Spain's Basque Country comes Zallo, capturing northern Spain's seafood expertise since 1970. Their pole-and-line caught albacore (bonito del norte) ensures zero by-catch while delivering exceptional quality from the nutrient-rich waters of the Cantabrian Sea.
